Greek yogurt is one of the foods I miss the most, but there are some awesome alternatives out there! I've tried cultured almond milk, and was not a fan.. but cultured coconut milk.. yum! I usually buy the plain cultured coconut milk from Whole Foods, but this weeks I tried a vanilla flavor from Trader Joe's. This parfait is just what I need in the morning, a filling and sweet treat.
Recipe:
1 Cup of Vanilla Cultured Coconut Milk
1/2 Ruby Red Grapefruit
1/2 Gala Apple
1 Tablespoon Shaved Almonds
Directions:
Cop up the grapefruit and apple into tiny pieces. Put 1/2 cup of cultured coconut milk in a cup/bowl, then put half of the grapefruit and apple in the cup. Pour in the rest of the cultured coconut milk, then the rest of the fruit, and top it of with some almonds! Enjoy xx
